Unlike green tea, oolong leaves, with their fuller body, require careful plucking at the right stage of maturity and immediate processing.

The journey of crafting oolong begins with wilting the leaves under the warm embrace of the sun, followed by gentle shaking in tubular bamboo baskets to induce the desired bruising effect. This precise technique ensures that the leaf edges oxidize faster than the center, leading to the development of the tea's unique flavors. After the appropriate duration, typically 15-25 minutes, the tea is fired, preserving its exceptional flavor profile.

The name "Iron Goddess of Mercy" was bestowed upon this tea by a farmer named Mr. Wei. When asked about the name for his special tea at the temple dedicated to Kuan Yin, he suggested "Ti Kuan Yin" in honor of the iron statue representing the namesake goddess. The name resonated so perfectly that it has remained unchanged ever since, becoming synonymous with this exceptional oolong tea.
